Chimichurri is an Argentinean sauce made from garlic and parsley that is usually served with grilled meats. This chimichurri recipe goes great with grilled tofu or any seitan or tempeh products. It goes really well with grilled Morningstar Italian Sausages. For my chimichurri, I like to add a bit of fresh jalapeno, it gives it a nice kick with a fresh taste.
recipe: serves about 4
1 cup firmly packed fresh flat-leaf parsley
6 garlic cloves
1/4 cup fresh oregano
3/4 cup extra virgin olive oil
4 Tbsp red wine vinegar
1/2 fresh jalapeno
1 tablespoon fresh lemon juice
1 teaspoon sea salt
pinch red pepper flakes
directions:
place all ingredients and blend. Do not blend to smooth, you still want a nice course texture.
